Easy Update:: Chocolate Covered Strawberries

We are coming up on a sad time of the year – that time where buying strawberries means you have to sell your first born in order to afford them. When they aren’t as sweet. When they are close to not being available at all.
Sigh.
Chin up kids. It’s also time to make the most of them. For me, that means one thing…
Chocolate.
This post is meant as encouragement. The “you can do it!” post! Chocolate covered strawberries are not only easy, but they are a light(er) dessert, and also – hello – they look way fancier than they actually are.
Ingredients::
- Strawberries, unhulled
- Chocolate, 4 oz. bar
Ha!
Directions::
- Lay a piece of wax or parchment paper on top of a cutting board. You will need room in your fridge for this board.
- Rinse the strawberries off in a strainer or in their plastic container. Pat them dry with a paper towel, set aside.
- Melt about half a bar of chocolate in the microwave in a heat proof bowl in 20 second increments, stirring between each time. Personally, I like Icelandic brand, semi-sweet chocolate. It melts beautifully and is super creamy and mellow. Love it.
- Dip a single strawberry into the melted chocolate until the strawberry is about 3/4 covered, swirling as you pull up for a nice finish. Lay the chocolate covered strawberry on the board. Repeat the process until all the strawberries are covered with chocolate. Place the entire cutting board in the refrigerator to cool. After strawberries are hardened, transfer to a plastic air-tight container, laying the strawberries in a single layer with wax paper in between each layer.
